Cooking
Cooking is more than finding a recipe and following it. It’s more than having the ‘correct’ pots, knives or bowls. It’s more that knowing how to chop, sauté or purée.
Cooking is understanding your audience, the people you are cooking for, their likes and dislikes, their habits of dining (as opposed to eating), and even their nutritional needs. Cooking is understanding your ingredients, where they come from, how they each smell and taste and even feel, and how they might interact with each other. Cooking is understanding your body and how it moves through your kitchen space. Cooking is understanding your own likes and dislikes in terms of things such as pots and knives and even cleaning.
Cooking is creating experiences; one of creating the food, the meal, itself and one of creating the eating experience. And not all experiences are created equal, nor should they be.
These ‘recipes’ are family staples, for the most part. And sometimes they are hardly recipes at all. Often they are more a list of ingredients we have found go well together. Somewhere between creativity and chaos!
Perhaps eventually, there may be more background information about the ingredients themselves. And about the moving through the kitchen. And about actual staples. And, perhaps, even about what to eat when.
